Sauté Spinach
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

Mix Filling
In a large bowl, combine the cooked spinach, ricotta cheese, feta cheese, Parmesan cheese, nutmeg, salt, and pepper. Mix until well combined and set aside.

Make Dough
In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center, add the eggs and water. Knead the mixture until you have a smooth dough, about 5-7 minutes. Wrap in plastic wrap and let it rest for 30 minutes.

Roll Dough
After resting, divide the dough into 4 pieces. Roll each piece into thin sheets using a pasta maker or a rolling pin. Cut into squares or circles for filling.

Fill and Shape
Place a teaspoon of the filling onto the center of each dough square or circle. Fold over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.

Cook Empanadas
In a large skillet, melt butter over medium heat. Add the filled empanadas and cook until golden brown on one side, about 3-4 minutes. Flip and cook the other side for an additional 3-4 minutes.

Serve
Remove empanadas from the skillet and place them on a paper towel to absorb excess oil. Serve warm, topped with additional grated Parmesan cheese.
