Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.

In a large bowl, whisk together flour and salt.

Make a well in the center of the flour mixture. Pour in the activated yeast mixture and olive oil. Mix until a dough forms.

Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle.

Spread mustard or mayonnaise evenly over the dough. Layer the sliced ham and cheese across the dough.

Starting from one end, carefully roll the dough into a log shape, sealing the edges as you go.

Slice the rolled dough into equal portions, about 1 inch thick, and place them on a baking sheet lined with parchment paper.

Preheat the oven to 375°F (190°C). Bake the rolls for 20-25 minutes or until golden brown and cooked through.
