    Prepare the Cream Cheese Mixture

    In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy.

    Add Sugar and Sour Cream

    Gradually mix in the granulated sugar until well combined. Then, add the sour cream and vanilla extract, mixing until smooth.

    Incorporate Eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

    Add Flour

    Gently fold in the flour using a spatula until just combined. Set aside.

Crust

    Prepare the Crust Mixture

    In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are evenly coated.

    Press the Crust into the Pan

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even crust.

Baking

    Combine and Bake

    Pour the cream cheese mixture over the prepared crust. Bake in a preheated oven at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly.

    Cool and Chill

    Turn off the oven and crack the door open. Let the cheesecake cool for 1 hour in the oven. Then, remove it from the oven, cover, and refrigerate for at least 4 hours, preferably overnight.

Berry Sauce

    In a small saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice. Cook until the berries break down and the mixture thickens, about 10-15 minutes.

    Remove from heat and let the sauce cool completely before serving.

Serving

    Once chilled, remove the cheesecake from the springform pan and slice. Serve each slice topped with berry sauce.
