Frying the Calamari

Prepare the Breading
In a mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Coat the Calamari
Dip each piece of calamari into the beaten eggs, then dredge in the flour mixture until well coated. If using breadcrumbs, coat the calamari again in breadcrumbs for extra crunch.

Heat the Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C). To test if the oil is ready, drop a small piece of bread in; it should sizzle immediately.

Fry the Calamari
Carefully add the coated calamari to the hot oil in batches, avoiding overcrowding. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.
Making the Marinara Sauce

Add the Tomatoes
Stir in the crushed tomatoes. Add oregano, basil, salt, and sugar. Mix well.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally. Season with black pepper to taste.
