Prep the Rib Roast
Start by letting the prime rib roast sit at room temperature for about 1 hour before cooking. This ensures even cooking.

Season the Roast
Preheat your oven to 450°F (230°C). In a small bowl, mix together kosher salt, black pepper, garlic powder, onion powder, and dried thyme. Rub the olive oil all over the roast, then generously coat with the seasoning mixture.

Roasting
Place the seasoned prime rib on a roasting rack in a roasting pan. Roast at 450°F (230°C) for 20 minutes. Then lower the temperature to 325°F (165°C) and continue roasting for about 15-20 minutes per pound for medium-rare doneness.

Rest the Roast
Once the internal temperature reaches 130°F (54°C) for medium-rare, remove the roast from the oven and cover it loosely with foil. Let it rest for at least 20-30 minutes before carving.

Prepare the Au Jus
While the roast is resting, add beef broth to the roasting pan, scraping up any browned bits from the bottom. Simmer on the stovetop for about 10-15 minutes to reduce slightly.

Slice the prime rib and serve with the prepared au jus and horsey sauce on the side.
