Prepare the Chicken
Begin by tenderizing the chicken breasts to about 1/2 inch thickness. You can use a meat mallet or rolling pin for this. Season the chicken with salt and pepper.

Marinate in Buttermilk
Place the seasoned chicken breasts in a bowl or zip-top bag and cover them with buttermilk. Let it marinate in the refrigerator for at least 1 hour, or overnight for best results.

Prepare the Breading
In a large bowl, mix together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Set Up the Breading Station
In another bowl, beat the eggs. Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, dip in the egg, then back in the flour mixture, pressing to ensure a good coating.

Fry the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully place the breaded chicken into the oil. Fry in batches until golden brown and cooked through, about 4-5 minutes per side.

Once cooked, transfer the fried chicken to a plate lined with paper towels to drain excess oil. Serve hot with your choice of side.
