Pastries

Method

Pastries

  1. 1

    Prepare the Pastry Dough

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the milk and vanilla extract. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  2. 2

    Shape the Pastries

Roll out the dough on a floured surface to about 1/4 inch thick. Cut into desired shapes and place on a baking sheet lined with parchment paper. Fill the center with a spoonful of fruit preserves.

  3. 3

    Bake

Preheat the oven to 375°F (190°C). Bake for 15-20 minutes or until golden brown. Allow to cool before serving.

Muffins

  1. 4

    Prepare the Muffin Batter

In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt. In another bowl, beat the eggs, then stir in the milk, vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Fold in the blueberries.

  2. 5

    Bake the Muffins

Preheat the oven to 400°F (200°C). Line a muffin tin with paper liners or grease it. Fill each muffin cup about 2/3 full with batter. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before serving.
