Prepare the Pork
Start by trimming any excess fat from the pork shoulder. Cut it into large chunks.

Season the Pork
In a large bowl, combine the olive oil, minced garlic, paprika, salt, and black pepper. Toss the pork chunks in the seasoning mixture until fully coated.

Sear the Pork
In a large skillet over medium-high heat, sear the pork on all sides until browned. This should take about 5-7 minutes.

Add Vegetables and Liquid
Transfer the seared pork to a slow cooker. Add the chopped onion, chicken broth, and apple cider vinegar.

Cook
Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the pork is tender and easily shredded.

Finish with Herbs
Once the pork is done, stir in the chopped fresh herbs for added flavor. Serve warm.
