Prepare the Fries
Preheat the oven and cook the frozen fries according to package instructions until golden and crispy.
Prepare the Coleslaw
In a large bowl, combine the coleslaw mix and coleslaw dressing. Toss until well coated and set aside in the refrigerator.
Prepare the Catfish
In a shallow dish, mix the cornmeal, flour, Cajun seasoning, salt, and black pepper. Dredge the catfish fillet in the mixture, ensuring it's evenly coated.
Fry the Catfish
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated catfish fillet and fry for about 4-5 minutes on each side or until golden brown and cooked through.
Serve
Remove the catfish from the skillet and drain on paper towels. Serve hot with fries, coleslaw, and tartar sauce on the side.
