Preheat your oven to 400°F (200°C). Cut the chicken breasts into bite-sized pieces. Season with salt and black pepper.

Coat the Chicken

Set up a breading station: Place flour in one bowl, beaten eggs in another, and panko in a third bowl. Dip each piece of chicken first in flour, then in egg, and finally in panko, ensuring they are well coated.

Bake the Chicken

Place the coated chicken pieces on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown and cooked through.

Make the Sauce

In a saucepan over medium heat, combine honey, Sriracha, soy sauce, rice vinegar, minced garlic, and sesame oil. Stir until the mixture is well combined and simmer for about 5 minutes.
