Cedar Plank Baked Salmon

Preparation

Soak the Cedar Plank

Soak the cedar plank in water for at least 1 hour before cooking.

Prepare the Salmon

Preheat your grill or oven to 375°F (190°C). In a small bowl, mix olive oil, lemon juice, garlic powder, salt, and black pepper. Brush this mixture over the salmon fillet.

Bake the Salmon

Place the soaked cedar plank on the grill or in the oven. Once it starts to smoke (if grilling), place the salmon on the plank and cook for about 20-25 minutes or until the salmon is cooked through and flakes easily with a fork.

Prepare the Salsa

While the salmon is baking, prepare the avocado-orange salsa. In a bowl, combine diced avocado, orange segments, chopped red onion, cilantro, lime juice, and salt. Mix gently and set aside.

Serve

Once the salmon is done, remove it from the cedar plank, and serve it topped with the avocado-orange salsa.
