Prepare the Dry Rub

In a bowl, combine salt, black pepper, paprika, brown sugar, garlic powder, and onion powder to create a dry rub.

Season the Meats

Apply the dry rub generously on both the brisket and spare ribs. Make sure to coat all sides.

Marinate

Wrap the seasoned meats in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Preheat the Smoker

Preheat your smoker to 225°F (107°C).

Smoke the Brisket

Place the brisket in the smoker and smoke for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).

Smoke the Spare Ribs

After the brisket has been in the smoker for about 2 hours, add the spare ribs. Smoke for about 5-6 hours or until tender.

Apply Liquid Smoke

During the last hour of smoking, brush both the brisket and ribs with liquid smoke.

Final Glaze

In the last 30 minutes, brush BBQ sauce on both meats for a sticky glaze.

Once cooked, remove the meats from the smoker and let them rest for at least 30 minutes before slicing and serving.
