Directions for Boise

1

Prepare the Hashbrown Crust

Preheat the oven to 425°F (220°C). In a large mixing bowl, combine the hashbrowns, olive oil, salt, and black pepper. Mix well.

2

Form the Crust

Spread the hashbrown mixture evenly into a greased baking dish, pressing it down to form a crust. Bake for 20-25 minutes or until golden brown.

3

Prepare the Salmon

While the crust is baking, season the salmon fillets with salt, black pepper, and lemon juice. Set aside.

4

Bake the Salmon

After the hashbrown crust is done, remove it from the oven and place the seasoned salmon fillets on top of the crust. Return to the oven and bake for an additional 15-20 minutes, or until the salmon is cooked through.

5

Make the Lemon-Garlic Cream Sauce

In a small saucepan, melt some butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in the heavy cream and let it simmer for 5-7 minutes until slightly thickened. Add fresh parsley and adjust seasoning as needed.

6

Serve

Once the salmon is done, remove the dish from the oven. Drizzle the lemon-garlic cream sauce over the salmon and serve hot.
