Chicken Preparation

Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.

Dredge the Chicken
Coat each chicken breast in flour, then dip into beaten eggs, and finally coat with breadcrumbs.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Cook the chicken breasts for about 5-7 minutes on each side or until golden brown and cooked through. Remove and set aside.

Add Tomatoes and Vodka
Stir in the crushed tomatoes and vodka. Bring the mixture to a simmer and let it cook for about 10-15 minutes.

Finish the Sauce
Lower the heat and stir in the heavy cream, red pepper flakes, salt, and black pepper. Cook for another 5 minutes until the sauce thickens slightly.

Add Cheese and Basil
Stir in the grated Parmesan cheese and chopped basil. Remove from heat and set aside.
Assembly

Combine Chicken and Sauce
Preheat the oven to 375°F (190°C). Place the cooked chicken breasts in a baking dish and pour the vodka sauce over them.

Add Mozzarella
Top each chicken breast with shredded mozzarella cheese.

Bake
Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.

Garnish with fresh basil and serve hot.
