Dessert 1: Chocolate Mousse

Dessert 2: Fruit Tart

Method

Chocolate Mousse Preparation

  1. 1

    Melt the Chocolate

In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

  2. 2

    Whip the Cream

In a separate bowl, whip the heavy cream with 25g of sugar and vanilla extract until soft peaks form. Set aside.

  3. 3

    Beat the Egg Whites

In another bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar and continue to beat until stiff peaks form.

  4. 4

    Combine Mixtures

Fold the melted chocolate into the whipped cream gently. Then, fold in the beaten egg whites until fully combined.

  5. 5

    Chill

Spoon the mousse into serving cups and refrigerate for at least 2 hours before serving.

Fruit Tart Preparation

  1. 6

    Prepare the Tart Shell

Preheat the oven to 180°C (350°F). Place the pie crust in a tart pan and trim any excess dough. Bake for 15-20 minutes until golden brown. Allow to cool.

  2. 7

    Make Pastry Cream

In a saucepan, simmer milk and sugar. In a bowl, whisk egg yolks with cornstarch. Slowly add hot milk to egg mixture, then return to saucepan and cook until thick. Cool completely.

  3. 8

    Assemble the Tart

Spread the pastry cream evenly over the cooled tart shell. Arrange the assorted fresh fruits on top of the cream.

  4. 9

    Prepare Glaze

Dissolve gelatin in warm water and mix with sugar. Brush the mixture over the fruits to give a shiny finish.

  5. 10

    Chill and Serve

Refrigerate the assembled tart for at least 30 minutes before slicing and serving.
