    Prepare the Dough

    In a mixing bowl, combine all-purpose flour and salt. Make a well in the center and crack in the eggs. Using a fork, gradually incorporate the flour into the eggs until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Make the Filling

    In a bowl, mix ricotta, mozzarella, parmesan, black pepper, and a pinch of salt until well combined.

    Roll Out the Dough

    Divide the dough into quarters. Roll out each quarter into thin sheets, about 1/16 inch thick.

    Form the Ravioli

    Place small spoonfuls of the cheese filling on one sheet of dough, spacing them about 2 inches apart. Use water to moisten the edges and place another sheet of dough on top. Press down around the filling to seal.

    Cut and Shape

    Cut between the mounds of filling with a pasta cutter or knife to form individual ravioli. Ensure they are well sealed.

Marinara Sauce

    Sauté the Vegetables

    In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.

    Add Tomatoes and Seasonings

    Pour in the crushed tomatoes along with dried basil, oregano, salt, black pepper, and sugar. Stir well and bring to a simmer.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer for 20-25 minutes, stirring occasionally. Add chopped parsley before serving.

Linguini

    Cook the Linguini

    Bring a large pot of salted water to a boil. Add linguini and cook according to package instructions until al dente, about 8-10 minutes.

    Drain and Combine

    Drain the linguini and return it to the pot. Drizzle with olive oil and toss to coat.
