Pasta

Herbs and Seasonings

Method

Preparation

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually around 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

  2. 2

    Prepare the Vegetables

While the pasta is cooking, wash and chop the bell peppers, zucchini, carrot, and broccoli into bite-sized pieces. Halve the cherry tomatoes and mince the garlic.

Cooking

  1. 3

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped bell peppers, zucchini, carrot, and broccoli. Sauté for 5-7 minutes until the vegetables are tender but still vibrant.

  2. 4

    Add Tomatoes and Seasonings

Stir in the halved cherry tomatoes, salt, and black pepper. Cook for another 2-3 minutes until the tomatoes start to soften.

  3. 5

    Combine with Pasta

Add the cooked spaghetti to the skillet with the sautéed vegetables. Toss everything together, adding reserved pasta water a little at a time to help create a light sauce. Cook for an additional 2-3 minutes until everything is heated through.

Serving

  1. 6

    Finish and Serve

Remove from heat and stir in the fresh basil leaves and grated Parmesan cheese. Adjust seasoning to taste. Serve immediately while hot, garnished with extra Parmesan and basil if desired.
