Chicken Preparation
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper on both sides.
- 2
Bread the Chicken
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of bread crumbs and grated Parmesan cheese. Dredge each chicken breast in flour, dip it in the eggs, and then coat it with the breadcrumb mixture.
- 3
Cook the Chicken
In a large skillet, heat olive oil over medium heat. Cook the breaded chicken breasts for about 4-5 minutes on each side, until golden brown. Transfer the cooked chicken to a baking dish.
Marinara Sauce Preparation
- 4
- 5
Add Tomatoes and Seasoning
Add the canned tomatoes (with their juices), oregano, basil, salt, black pepper, and sugar. Simmer the sauce for about 20 minutes, stirring occasionally, until it thickens.
Assembly and Baking
- 6
Assemble the Dish
Pour the marinara sauce evenly over the cooked chicken breasts in the baking dish. Sprinkle the shredded mozzarella cheese on top.
- 7
Bake
Bake the chicken in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
- 8
Garnish and Serve
Remove from the oven, garnish with fresh basil if desired, and serve hot.
