Prepare the Chicken
Pound each chicken breast to about 1/2 inch thick using a meat mallet or rolling pin. This will ensure even cooking.

Season the Flour
In a shallow dish, mix the all-purpose flour with salt and black pepper. Dredge each chicken breast in the flour mixture, shaking off the excess.

Sear the Chicken
In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat. Once hot, add the chicken breasts (in batches if necessary) and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Make the Sauce
In the same skillet, add the remaining olive oil and butter. Add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and lemon juice, scraping the bottom of the skillet to deglaze. Stir in the lemon zest and capers, and let it simmer for about 3-5 minutes.
