Fried Calamari

    Prepare the Calamari

    In a large bowl, combine the cleaned calamari rings with salt, black pepper, garlic powder, and paprika. Mix well to ensure the calamari is evenly coated with the seasoning.

    Prepare the Breading

    In another bowl, combine the all-purpose flour and cornstarch. This mixture will give the calamari a light and crispy texture.

    Dredge the Calamari

    Dip the seasoned calamari rings into the flour-cornstarch mixture, coating them evenly. Shake off any excess flour.

    Heat the Oil

    In a large, deep pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of the batter in; it should sizzle immediately.

    Fry the Calamari

    Carefully add the breaded calamari rings to the hot oil in batches. Do not overcrowd the pot. Fry for about 2-3 minutes or until golden brown, turning them halfway through for even cooking.

    Drain the Calamari

    Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil.

Marinara Sauce

    Sauté the Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add Tomatoes and Spices

    Add the crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir to combine.

    Simmer the Sauce

    Let the sauce simmer on low heat for about 15 minutes, stirring occasionally. This allows the flavors to meld together.

    Finish the Sauce

    Stir in the chopped fresh basil just before serving to add a fresh flavor.
