Make the Dough

Prepare the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and crack in the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.
Prepare the Filling

Mix the Filling
In a medium bowl, combine ricotta cheese, grated Romano cheese, egg, salt, black pepper, nutmeg, and chopped parsley. Mix until well combined and set aside.
Make the Marinara Sauce

Roll Out Dough
After resting, divide the dough into four pieces. Roll each piece out thinly using a pasta machine or rolling pin.

Cut Ravioli
Place small spoonfuls of the filling about 2 inches apart on one half of the dough. Fold the other half over and press to seal, cutting out individual ravioli with a knife or ravioli cutter.
Cook the Pasta

Cook the Ravioli
In the same pot, add the ravioli to boiling water. Cook for 3-4 minutes or until they float and are tender. Remove with a slotted spoon.
Serve

Assemble the Dish
On a large plate, serve a bed of linguine topped with the cooked ravioli. Spoon marinara sauce over the top and garnish with additional basil or cheese if desired.
