Preparation
Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.
Mix Coating
In a large bowl, mix the all-purpose flour, cornstarch, salt, and black pepper until well combined.
Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.
Cooking
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).
Fry the Calamari
Fry the coated calamari rings in batches for about 1-2 minutes, or until they are golden brown and crispy. Avoid overcrowding the pan.
Drain and Season
Remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil. Sprinkle with additional salt and pepper to taste.
Serving
Plate the Dish
Arrange the fried calamari on a serving platter. Top with sliced jalapeno and peppadew peppers.
Garnish
Sprinkle chopped cilantro over the calamari and serve with lime wedges on the side for squeezing over the dish.
