    Prepare the Matcha

    In a small bowl, sift the matcha powder to remove any clumps.

    Heat the water to just below boiling (about 80°C or 176°F).

    Pour the hot water over the sifted matcha powder.

    Using a bamboo whisk (chasen) or a small whisk, whisk the matcha vigorously in a zigzag motion until it is frothy and well combined.

    Sweeten with honey or preferred sweetener if desired. Serve in an espresso cup.

Hoji Cha Financier

    Prepare the Batter

    Preheat your oven to 180°C (350°F) and grease or line a financier mold with parchment paper.

    Melt the unsalted butter in a saucepan over medium heat until it turns golden brown, then remove it from heat and let it cool slightly.

    In a mixing bowl, whisk together the brown sugar and egg whites until combined.

    Add the cooled brown butter to the egg mixture and stir until well combined.

    Sift in the all-purpose flour, hoji cha powder, and salt. Mix until just combined, being careful not to overmix.

    Pour the batter into the prepared financier mold, filling each cavity about 3/4 full.

    Bake in the preheated oven for about 15-20 minutes, or until the financiers are golden brown and a toothpick inserted into the center comes out clean.

    Remove from the oven and let them cool in the mold for a few minutes before transferring to a wire rack to cool completely.
