Cucumber-Mint Simple Syrup

    Prepare the Simple Syrup

    In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely.

    Add Cucumber and Mint

    Once the sugar has dissolved, add the sliced cucumber and fresh mint leaves to the saucepan. Bring to a gentle simmer and let it cook for about 5-7 minutes.

    Strain the Syrup

    Remove from heat and let it cool. Once cooled, strain the mixture through a fine sieve or cheesecloth into a clean container, discarding the solids. You will have a fragrant cucumber-mint syrup.

Matcha Mocktail Assembly

    Prepare the Matcha

    In a small bowl, whisk the matcha powder with a splash of warm water (about 2 tablespoons) until it becomes a smooth paste, ensuring there are no lumps.

    Mix the Mocktail

    In a large glass, combine the matcha paste with the cucumber-mint simple syrup (about 2-3 tablespoons, adjust to taste) and stir well to combine.

    Add Sparkling Water

    Slowly pour in the sparkling water, stirring gently to mix everything together without losing the fizz.

    Garnish and Serve

    Add cucumber slices and mint sprigs for garnish. Serve immediately over ice if desired.
