Preparation of Sardines

Clean the Sardines
Begin by cleaning the fresh sardines. Remove the heads, guts, and scales. Rinse them under cold water and pat dry with paper towels.

Marinate the Sardines
Place the cleaned sardines in a shallow dish. Pour the marinade over the sardines, ensuring they are well coated. Cover with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for more flavor.

Prepare the Grated Tomato
While the sardines are marinating, prepare the grated tomato. Grate fresh tomatoes using a box grater, discarding the skin. Set aside.

Slice the Piparras
Drain the piparras from their pickling liquid and slice them into smaller pieces if desired.

Assemble the Dish
Once the sardines are marinated, arrange them on a serving plate. Spoon the grated tomato over the sardines and scatter the sliced piparras on top.

Drizzle with Garlic Oil
For added flavor, drizzle some of the leftover marinade (garlic oil) over the assembled sardines and serve immediately.
