Prepare the Ingredients
Start by finely chopping the onion, red bell pepper, and garlic cloves. Set them aside for later use.
Cook the Txistorra
In a large skillet, heat the olive oil over medium heat. Add the txistorra and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
Cooking
Add Seasoning
Stir in the paprika, salt, and black pepper. Cook for another minute to let the spices bloom.
Combine with Txistorra
Return the cooked txistorra to the skillet and mix well with the sautéed vegetables. Cook for an additional 3-5 minutes to heat through.
Serving
Garnish and Serve
Remove from heat, sprinkle fresh parsley on top, and serve hot with crusty bread and pico de gallo on the side if desired.
