Clean the Razor Clams
Place the razor clams in a bowl of cold water and let them soak for 30 minutes. This will help to remove any sand or grit. After soaking, scrub the shells under running water to ensure they are clean.

Prepare the Garlic and Parsley
While the clams are soaking, finely chop the garlic cloves and parsley. Set aside for later use.

Cook the Razor Clams
In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add the Clams
Add the cleaned razor clams to the skillet. Cover and cook for about 3-4 minutes or until the clams open up. Discard any clams that remain closed.

Add Sherry Vinegar and Season
Once the clams have opened, add the sherry vinegar, sea salt, and black pepper to the skillet. Stir gently to combine and cook for an additional minute.
