Prepare the Ingredients
Start by peeling and thinly slicing the garlic cloves. Slice the red onion into thin strips. Set aside.

Combine Olives and Piparras
In a large mixing bowl, combine the mixed olives and piparras peppers. Ensure they are evenly distributed.

Make the Marinade
In a separate bowl, whisk together the olive oil, red wine vinegar, sliced garlic, sliced red onion, pimentón de la Vera, salt, and black pepper until well combined.

Marinate the Olives
Pour the marinade over the olives and piparras mixture. Stir gently to coat all the ingredients evenly.

Add Fresh Parsley
Finely chop the fresh parsley and sprinkle it over the marinated olives. Mix gently.

Refrigerate
Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Refrigerate for at least 2 hours, ideally overnight, to allow the flavors to meld.
