Method
Preparing the Squid

Clean the Squid
Rinse the fresh squid under cold water and pat dry with paper towels. Remove the head and innards if not already cleaned.

Grill the Squid
Preheat a grill pan over medium-high heat. Grill the squid for about 2-3 minutes on each side until they are cooked through and have nice grill marks.

Serve with Lemon
Once grilled, serve the squid immediately with lemon wedges on the side.
Making the Potato Cream

Blend the Cream
Add butter, heavy cream, salt, and black pepper to the potatoes. Use a hand blender or regular blender to puree until smooth and creamy.

Adjust Consistency
If the cream is too thick, add a little more heavy cream or water to reach desired consistency. Keep warm until serving.
Making the Parsley Picada

Chop the Ingredients
Finely chop the fresh parsley and garlic clove.

Combine the Picada
In a small bowl, mix the chopped parsley, garlic, olive oil, and salt. Adjust salt to taste.
