Method

Preparing the Squid

  1. 1

    Clean the Squid

Rinse the fresh squid under cold water and pat dry with paper towels. Remove the head and innards if not already cleaned.

  2. 2

    Marinate the Squid

In a bowl, combine the squid with olive oil, minced garlic, salt, and black pepper. Toss well to coat. Let it marinate for 15-20 minutes.

  3. 3

    Grill the Squid

Preheat a grill pan over medium-high heat. Grill the squid for about 2-3 minutes on each side until they are cooked through and have nice grill marks.

  4. 4

    Serve with Lemon

Once grilled, serve the squid immediately with lemon wedges on the side.

Making the Potato Cream

  1. 5

    Prepare the Potatoes

Peel the potatoes and cut them into small chunks. Place them in a pot of salted boiling water.

  2. 6

    Cook the Potatoes

Boil the potatoes for about 15-20 minutes or until fork-tender. Drain and return to the pot.

  3. 7

    Blend the Cream

Add butter, heavy cream, salt, and black pepper to the potatoes. Use a hand blender or regular blender to puree until smooth and creamy.

  4. 8

    Adjust Consistency

If the cream is too thick, add a little more heavy cream or water to reach desired consistency. Keep warm until serving.

Making the Parsley Picada

  1. 9

    Chop the Ingredients

Finely chop the fresh parsley and garlic clove.

  2. 10

    Combine the Picada

In a small bowl, mix the chopped parsley, garlic, olive oil, and salt. Adjust salt to taste.
