Prepare the lettuce
Wash the romaine lettuce thoroughly under cold water. Remove any damaged leaves and pat dry with a paper towel. Chop the lettuce into bite-sized pieces and set aside.

Prepare the mayonnaise
In a small bowl, add the mayonnaise. You can mix it with some lemon juice or spices if you want to add extra flavor, but that is optional.

Prepare the jamón Ibérico
Slice the jamón Ibérico into thin strips or pieces, ensuring they are easy to roll into the tortilla.

Assemble the flautas
Take a corn tortilla and spread a tablespoon of mayonnaise over it. Place a few pieces of jamón Ibérico in the center followed by a small handful of chopped romaine lettuce. Roll the tortilla tightly to form a flauta. Repeat this process for all tortillas.

Fry the flautas
In a deep frying pan, heat the vegetable oil over medium heat until it's hot. Carefully add the rolled flautas, seam side down, and fry until golden brown and crispy, about 3-4 minutes on each side. Remove the flautas and place them on a paper towel to drain excess oil.

Serve the flautas
Place the flautas on a serving platter and serve immediately. You can serve them with extra mayonnaise or your favorite dipping sauce on the side.
