Preparation of Pork Ribs

    Season the Ribs

    Rub the pork ribs with salt and black pepper evenly on both sides. Let them sit at room temperature for about 30 minutes.

    Prepare the Marinade

    In a blender, combine roasted red peppers, almonds, garlic, olive oil, red wine vinegar, smoked paprika, and salt. Blend until smooth to create the romesco marinade.

    Marinate the Ribs

    Place the seasoned pork ribs in a large bowl or resealable bag. Pour the romesco marinade over the ribs, ensuring they are well coated. Seal the bag or cover the bowl, and marinate in the refrigerator for at least 2 hours, preferably overnight.

Cooking the Ribs

    Preheat the Oven

    Preheat your oven to 180°C (350°F).

    Bake the Ribs

    Place the marinated pork ribs on a baking sheet lined with parchment paper. Cover with aluminum foil and bake for 1.5 hours.

    Broil for Crispiness

    Remove the foil and turn the oven to broil. Broil the ribs for an additional 10-15 minutes, or until the surface is caramelized and crispy.

Preparation of Spinach Catalana

    Sauté Garlic

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Cook the Spinach

    Add fresh spinach to the skillet. Season with salt and black pepper. Cook, stirring occasionally, until the spinach is wilted, about 3-5 minutes.

Plating

    Serve the Ribs and Spinach

    Slice the pork ribs into individual portions and arrange them on a serving platter. Serve with the sautéed spinach catalana on the side.
