    Prepare the Ingredients

    Dice the chicken thighs into bite-sized pieces. Slice the chorizo into rounds. Chop the red and green bell peppers, onion, and tomatoes. Mince the garlic and set aside.

Cooking

    Cook the Protein

    In a large paella pan or wide skillet, heat the olive oil over medium heat. Add the chicken pieces and cook for about 5-7 minutes until browned. Remove and set aside.

    Add Chorizo

    In the same pan, add the sliced chorizo and cook until it releases its oils and becomes crispy, about 3-4 minutes.

    Sauté Vegetables

    Add the chopped onion, garlic, and bell peppers to the pan with the chorizo. Sauté for about 5 minutes until the vegetables are softened.

    Incorporate Rice

    Stir in the rice, smoked paprika, and saffron, cooking for another 2 minutes to toast the rice slightly.

    Add Stock and Chicken

    Pour in the chicken stock, add the diced tomatoes, and return the chicken to the pan. Season with salt and black pepper. Stir well.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Do not stir the rice anymore. Allow it to simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.

    Add Peas

    Five minutes before the cooking time is up, sprinkle the frozen peas over the top of the paella, without stirring.

Serving

    Garnish and Serve

    Once cooked, remove the pan from heat. Let it rest for about 5 minutes. Garnish with chopped parsley and serve with lemon wedges on the side.
