    Chop the Vegetables

    Finely chop the onion, bell pepper, carrot, and zucchini. Mince the garlic and ginger.

    Prepare the Chicken (if using)

    If using chicken, cut the breast into bite-sized pieces and season with salt.

Cooking

    Sauté the Aromatics

    In a large skillet, heat 2 tablespoons of oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent (about 3-4 minutes).

    Add the turmeric, curry powder, cumin, coriander, and chili powder to the skillet. Stir well and cook for another 1-2 minutes until fragrant.

    If using chicken, add the chicken pieces to the skillet and cook until they are no longer pink, about 5-7 minutes.

    Add the chopped bell pepper, carrot, and zucchini to the skillet. Stir to combine and cook for about 5 minutes until the vegetables start to soften.

    Incorporate Coconut Milk

    Pour in the coconut milk, stirring well to combine. Bring to a gentle simmer and let it cook for 10 minutes to allow the flavors to meld.
