Preparing the Broth

In a large pot, add 4 cups of water and bring it to a boil over medium heat.

While the water is heating, prepare the lemongrass by smashing the stalks with the back of a knife and cutting them into 2-inch pieces.

Add the smashed lemongrass, kaffir lime leaves, galangal, and Thai bird chilies to the boiling water.

Allow the broth to simmer for 10 minutes to extract the flavors.

After simmering, stir in the fish sauce and lime juice, then remove the pot from heat.
Cooking the Soup

Return the pot with the broth to medium heat and bring it back to a gentle boil.

Add the shrimp to the pot and cook for about 2-3 minutes, or until they turn pink and opaque.

Taste the soup and adjust seasoning with more fish sauce or lime juice if desired.

Finally, remove from heat and stir in the chopped cilantro and sliced green onions just before serving.
