Cook Chorizo and Ground Beef
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes. Add chorizo and ground beef, cooking until browned, breaking it up with a spatula. Add taco seasoning and mix well, cooking for an additional 2-3 minutes until fully combined.

In a mixing bowl, combine softened cream cheese, sour cream, chopped jalapeño, lime juice, and chopped cilantro. Mix using a hand mixer or a whisk until smooth and creamy.

Layer the Nachos
Preheat the oven to 180°C (350°F). On a large baking tray, spread out the tortilla chips evenly. Pour the meat mixture over the chips, followed by the creamy sauce. Sprinkle shredded mozzarella and cheddar cheese generously over the top.

Place the tray in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
