Dough

For frying

Method

Dough Preparation

  1. 1

    Make the Dough

In a mixing bowl, combine all-purpose flour and salt. Add ghee or oil and mix until crumbly. Gradually add water, kneading until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.

Filling Preparation

  1. 2

    Prepare the Filling

Heat a tablespoon of oil in a pan over medium heat. Add cumin seeds and let them crackle. Add chopped onions and sauté until they turn golden brown. Stir in grated ginger and green chili, cooking for another minute. Mix in the mashed potatoes, green peas, coriander powder, garam masala, salt, and chopped coriander leaves. Cook for another 2-3 minutes, then remove from heat and let it cool.

Samosa Assembly and Frying

  1. 3

    Shape the Samosas

Divide the dough into equal balls. Roll each ball into a thin oval shape. Cut the oval in half to form two semicircles. Take one semicircle, form a cone by bringing the straight edge together and sealing it with water. Fill the cone with the potato-pea filling and seal the top edge by pressing it together. Repeat for all dough pieces.

  2. 4

    Fry the Samosas

Heat oil in a deep frying pan over medium heat. Carefully add the samosas in batches, frying until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.
