Stir in the red curry paste and cook for an additional 2 minutes, allowing it to toast slightly.

Add Coconut Milk and Broth
Pour in the coconut milk and vegetable broth, stirring well to combine.

Incorporate Vegetables
Add the sliced bell pepper, carrot, zucchini, and broccoli florets to the curry mixture.

Bring the curry to a gentle simmer and cook for 10-15 minutes, or until the vegetables are tender.

If using, add the cubed tofu to the curry and stir gently.
Garnishing and Serving
