Preparation of Noodles

    Soak the Noodles

    Place rice noodles in a large bowl and cover with hot water. Let them soak for about 20-30 minutes until softened. Drain and set aside.

Cooking Protein

    Cook Shrimp

    In a large pan or wok over medium-high heat, add a splash of oil. Once hot, add the shrimp and stir-fry for about 2-3 minutes until they turn pink and opaque. Remove from the pan and set aside.

    Cook Tofu

    In the same pan, add a little more oil if needed, then add the cubed tofu. Stir-fry for about 4-5 minutes until golden brown. Remove from the pan and set aside.

Cooking the Dish

    Stir-fry Vegetables

    Add the sliced red bell pepper to the pan and stir-fry for 2-3 minutes until slightly softened. Then add the bean sprouts and green onions, cooking for another 1-2 minutes.

    Combine Ingredients

    Add the soaked rice noodles, cooked shrimp, and tofu back into the pan. Pour in the fish sauce, soy sauce, brown sugar, lime juice, and Sriracha. Toss everything together until well combined and heated through, about 3-4 minutes.

Serving

    Plate and Garnish

    Serve the Pad Thai hot, garnished with chopped peanuts, fresh cilantro, and lime wedges on the side.
