Method
Making the Gelato Base

Heat Milk and Cream
In a saucepan, combine the whole milk and heavy cream. Heat over medium heat until just simmering, then remove from heat.

Whisk Egg Yolks and Sugar
In a mixing bowl, whisk together the egg yolks and granulated sugar until pale and creamy.

Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes). Do not let it boil.

Add Flavorings
Remove from heat and stir in the vanilla extract. If you want to add a flavor variation, mix in the chocolate syrup, pureed strawberries, or chopped pistachios at this stage.

Cool the Mixture
Transfer the mixture to a bowl and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours or overnight.
Churning the Gelato

Churn the Mixture
Once the gelato base is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze the Gelato
Transfer the churned gelato to an airtight container, smoothing the top with a spatula. Cover and freeze until firm, about 4-6 hours.

Scoop the gelato into bowls or cones and enjoy! You can also garnish with additional flavorings or toppings if desired.
