Preparing the Marinade

Combine Marinade Ingredients
In a large bowl, mix together soy sauce, coconut milk, lime juice, minced garlic, grated ginger, brown sugar, salt, and black pepper until well combined.

Marinate Chicken
Cut the boneless chicken breast into bite-sized pieces. Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best flavor.
Making the Peanut Sauce

Mix Sauce Ingredients
In a medium bowl, combine peanut butter, coconut milk, soy sauce, lime juice, honey, sriracha sauce, and water. Whisk together until smooth and creamy. Taste and add salt as needed.
Grilling the Chicken

Prepare Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill to medium-high heat.

Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece for even cooking.
