Pork Rinds Preparation

Prepare the Pork Skin
Start by cutting the pork skin into large pieces, about 2-3 inches each.

Season the Pork Skin
Rub the pork skin pieces with salt and let them sit for about 30 minutes to absorb the flavor.

Fry the Pork Rinds
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the pork skin pieces in batches, frying them until they puff up and turn golden brown, about 3-5 minutes. Remove and drain on paper towels.
Curry Sauce Preparation

Prepare the Curry Sauce
In a medium saucepan over medium heat, combine the coconut milk and red curry paste. Stir well to mix the paste into the coconut milk.

Season the Sauce
Add the fish sauce, brown sugar, and lime juice to the saucepan. Stir continuously and let it simmer for about 5-7 minutes until slightly thickened.

Finish the Sauce
Remove from heat and stir in the fresh cilantro, reserving a bit for garnish.
