Burrito Filling

Prep and cook aromatics
Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tsp vegetable oil. When shimmering, add the diced onion and red bell pepper and cook, stirring occasionally, until softened and beginning to brown, about 4–5 minutes. Add the chopped jalapeño and cook 1 minute more. Transfer the cooked vegetables to a bowl and set aside.

Scramble eggs
Crack 6 eggs into a medium bowl, add 1/4 cup whole milk, 1 tsp salt, and 1/2 tsp black pepper. Whisk until homogenous and slightly frothy. Wipe the skillet clean if needed, then melt 2 tbs butter over medium-low heat. Pour eggs into the skillet. Let sit undisturbed 10–15 seconds, then gently stir and fold with a silicone spatula, creating large soft curds. Cook until eggs are just set but still moist, about 2–3 minutes total. Remove from heat a bit early; residual heat will finish them.

Prepare cheese mixture
In a small bowl, mix 1.5 cups shredded sharp cheddar and 1/2 cup shredded pepper jack so you have a uniform cheese blend. This will provide both melt and a slight kick.

Warm sour cream and salsa
If you prefer warm salsa, microwave 1/2 cup salsa for 20–30 seconds or warm gently on the stovetop. Keep sour cream chilled until serving or, if you like, warm slightly to bring to room temperature.

Warm tortillas
Heat a clean skillet or griddle over medium. Lightly brush both sides of each flour tortilla with melted butter (about 1/4 tbs per side). Warm each tortilla 20–30 seconds per side until pliable and lightly toasted. Keep wrapped in a clean towel to stay warm and soft while assembling.

Assemble burritos
Lay a warm tortilla flat. Spoon about 1/4 of the egg, meat, and vegetable mixture down the center in a horizontal line (about 3/4 to 1 cup). Sprinkle about 1/3 to 1/2 cup of the cheese blend over the filling. Add 1–2 tbs salsa and 1 tbs sour cream (or to taste). Add optional pickled jalapeños if using. Fold the bottom edge up over the filling, fold the sides in, then roll tightly to form a burrito. Repeat for remaining tortillas and filling.

Finish on the griddle (optional)
For a crisp exterior and melted cheese inside, heat the skillet to medium-high and add a light smear of butter. Place burrito seam-side down and press gently with a spatula or grill press. Cook 1.5–2 minutes per side until golden-brown and cheese is melted. Flip once, being careful to keep the filling sealed.

Serve
Slice each burrito in half on the diagonal if desired. Serve hot with extra salsa, sour cream, and a sprinkle of chopped cilantro.
