Base Oatmeal

Combine and bring to simmer
In a small saucepan, combine 1 cup rolled oats, 1.5 cups water, and a pinch of salt. Place over medium-high heat and bring just to a simmer, stirring once or twice to prevent sticking.

Reduce and cook
Once simmering, reduce heat to medium-low. Cook uncovered, stirring occasionally, until the oats absorb most of the liquid and reach a creamy consistency, about 6–8 minutes for rolled oats. If using quick oats, reduce cooking time to 1–2 minutes; for steel-cut oats, follow package instructions (longer cook and more liquid).

Once the oatmeal is nearly done, stir in 1 tablespoon brown sugar or maple syrup, 1/2 teaspoon vanilla extract, and 1/4 teaspoon ground cinnamon. Taste and adjust sweetness or spice to preference.

Stir into the hot oatmeal any mix-ins that benefit from gentle warming: 1 tablespoon chia or flax seeds and 2 tablespoons dried fruit (if using). Stir thoroughly to incorporate and allow seeds to soften for a minute.
