    Prep dry ingredients

    In a large mixing bowl, whisk together 2 cups all-purpose flour, 2 tsp baking powder, 1/2 tsp baking soda, 2 tbsp sugar, and 1/2 tsp fine sea salt until evenly combined.

    Whisk wet ingredients

    In a separate bowl or large measuring cup, whisk 2 large eggs lightly, then add 1 1/2 cups buttermilk, 4 tbsp melted and slightly cooled unsalted butter, and 1 tsp vanilla extract. If using milk + acid, combine and let sit 5 minutes first.

    Combine wet and dry

    Make a well in the dry ingredients and pour in the wet mixture. Gently fold with a spatula or wooden spoon until mostly combined. Small lumps are fine — avoid overmixing to keep pancakes tender. If batter seems very thick, add 1-2 tbsp additional milk to reach a pourable but thick consistency.

    Rest the batter

    Let the batter rest 8–10 minutes at room temperature. This relaxes gluten and allows leaveners to activate for fluffier pancakes.

    Preheat pan or griddle

    Place a heavy skillet or nonstick griddle over medium heat and let it preheat 4–5 minutes. The surface should be hot but not smoking. Lightly grease with 1 tsp butter or neutral oil and wipe with a paper towel to leave a thin coating.

    Add berries to batter

    If using fresh berries, gently fold 1 cup into the rested batter or reserve some to sprinkle on the pancakes as they cook. If using delicate berries, fold right before cooking to avoid color bleed.

    Cook pancakes

    For each pancake, pour 1/4 cup batter onto the preheated griddle. Cook until bubbles form across the surface and the edges look set, 2–3 minutes. Carefully flip with a spatula and cook the second side until golden brown, 1–2 minutes more. Adjust heat as needed to avoid burning. Repeat, greasing the pan with the remaining butter (about 1 tbsp total during the batch) as necessary.

    Transfer finished pancakes to a warm oven (100–110°C / 210–230°F) on a baking sheet set over a rack while you finish the remaining batter so they stay warm and retain texture.

    Stack pancakes and garnish with lemon zest (1 tsp) if using, a pat of unsalted butter, a dusting of 1 tsp powdered sugar if desired, and serve with 1/2 cup warm maple syrup on the side. For a restaurant-style presentation, add a small scattering of fresh berries on top and serve immediately.
