    Prepare chicken

    Trim any excess fat from the chicken breasts and, if thick, butterfly or pound to an even thickness about 1/2 inch. Cut each breast into 3–4 strips (for salad-friendly pieces).

    Marinate

    Place chicken strips in a bowl or zip-top bag and pour the buttermilk over them. Cover and refrigerate for 20–30 minutes (or up to 2 hours) to tenderize and help coating adhere.

    Make dredging stations

    In a shallow bowl combine flour, cornstarch, paprika, garlic powder, onion powder, salt and black pepper. In a second shallow bowl beat the eggs. In a third bowl mix panko breadcrumbs with the remaining 1/2 tsp paprika (if you have any left) or a pinch of salt for extra crunch.

    Dredge the chicken

    Remove chicken from buttermilk, letting excess drip off. First coat each strip in the seasoned flour mixture, then dip into beaten eggs, then press into the panko mixture, ensuring an even, well-adhered coating. Set coated strips on a rack while you heat the oil.

    Fry or pan-fry

    Pour vegetable oil into a large skillet to a depth of about 1/4 inch (or heat a deep pot with oil to 350°F / 175°C for deep-frying). Heat over medium-high until shimmering. Add chicken strips in a single layer (do not overcrowd). Fry 3–4 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C). For deeper crisp, fry 2–3 minutes per side in hot oil. Transfer cooked strips to a paper towel-lined plate or wire rack and let rest 3 minutes; season lightly with a pinch of salt while hot.

    Prepare vegetables

    While the chicken marinates or fries, rinse and dry the salad greens thoroughly. Halve the cherry tomatoes, thinly slice the cucumber and red onion, shred the carrots if not pre-shredded, and slice the avocado right before assembling to avoid browning.

    Assemble base

    In a large bowl or on individual plates, arrange the mixed greens. Scatter cherry tomatoes, cucumber slices, shredded carrots, and red onion on top. Add avocado slices and sprinkle the crumbled feta or shaved Parmesan if using.

    Make dressing

    In a small jar or bowl combine lemon juice, Dijon mustard, honey, minced garlic, salt and pepper. Whisk or shake while slowly streaming in the extra-virgin olive oil until the dressing emulsifies and is smooth. Taste and adjust seasoning — add more honey for sweetness, lemon for brightness, or salt to taste.

    Dress salad

    Just before serving, drizzle 2–3 tablespoons of dressing over the salad (or toss salad with desired amount) so greens remain crisp. Reserve remaining dressing for guests or for drizzling over chicken.

Finish and Serve

    Arrange 3–4 crispy chicken strips over each portion of dressed salad. Optionally slice the chicken and fan over the greens. Serve immediately while chicken is hot and coating is crisp. Provide extra dressing on the side.
