If using vegetables or meats that need cooking (mushrooms, bell pepper, bacon, or ham not pre-cooked), dice to uniform small pieces. Heat a small skillet over medium heat, add 1 tsp olive oil, and sauté mushrooms and bell pepper until softened and any released liquid evaporates, about 4–5 minutes. If using raw bacon, cook until crisp and chop. Remove from skillet and keep warm.

Crack 3 large eggs into a bowl. Add 2 tablespoons milk or half-and-half, 1 tsp kosher salt, and 1 tsp freshly ground black pepper. Whisk vigorously until yolks and whites are fully combined and slightly frothy (about 30 seconds). This creates a tender, slightly airy omelette.

Place a 8–10 inch nonstick or well-seasoned skillet over medium-low to medium heat. Add 1 tablespoon unsalted butter and let it melt and foam but not brown (about 30 seconds). If using, add 1 tsp olive oil to raise the smoke point and help with even browning.

Let the fillings warm for 20–30 seconds. Gently fold the empty half of the omelette over the fillings using the spatula, forming a half-moon. Press lightly to seal.

Cook another 20–30 seconds for a soft, slightly runny interior, or 1–1.5 minutes for fully set filling. Avoid overcooking to keep a tender texture.
