    Place a nonstick or well-seasoned sauté pan over medium-low heat. Add 2 tablespoons unsalted butter and 1 teaspoon olive oil. When butter has melted and starts to foam but not brown (about 1 minute), add the minced small shallot. Cook, stirring gently, until translucent and fragrant, about 1–2 minutes. Keep heat moderate to avoid browning the butter.

    If using baby spinach, add the roughly chopped 1 cup now. Sauté just until wilted, 20–30 seconds. Spread the aromatics and greens evenly across the pan to create a warm base for the eggs.

    Increase heat to medium-low to maintain gentle cooking. Pour the whisked egg mixture into the pan, allowing it to settle around the shallot and spinach. Let the edges begin to set undisturbed for 10–15 seconds.

    Using a silicone spatula, push the eggs from the edges toward the center in sweeping motions every 10–15 seconds. Allow curds to form between each sweep—this slow folding produces soft, creamy curds. Continue for 2–4 minutes, adjusting heat so the eggs never cook too quickly or brown.

    When the eggs are about 80% set (still slightly wet and shiny), sprinkle in optional add-ins as desired: up to 1 cup shredded cheddar, 2 tablespoons chopped sun-dried tomatoes, and/or 4 slices crumbled cooked bacon.
