    Beat eggs

    Crack the 6 large eggs into a medium bowl. Add 1 tablespoon whole milk, 1/2 teaspoon of the salt, and 1/2 teaspoon of the black pepper. Whisk until well combined and slightly frothy; set aside.

    Cook scrambled eggs

    Heat a nonstick skillet over medium-low heat. Add 1 tablespoon of the unsalted butter and let it melt and foam but not brown. Pour the beaten eggs into the pan. Using a silicone spatula, stir slowly, pushing eggs from the edges to the center. When eggs are about 90% set but still moist, remove from heat (they will finish cooking from residual heat). Stir in a small handful (about 1/4 cup) of the shredded cheddar to melt into the eggs. Keep warm.

    Render bacon

    In a large skillet over medium heat, add the 6 pieces of chopped bacon. Cook, stirring occasionally, until fat renders and bacon is crisp-tender (about 6–8 minutes). Using a slotted spoon, transfer bacon to a paper-towel-lined plate, leaving about 1–2 tablespoons of bacon fat in the pan. Discard excess fat or reserve for another use.

    Sauté aromatics & peppers

    Add the remaining 1 tablespoon of unsalted butter to the hot skillet with the bacon fat. Add 1/2 cup diced yellow onion and 1/2 cup diced green bell pepper. Sauté over medium heat until softened and beginning to caramelize, about 5 minutes. Add 1/2 teaspoon chopped jalapeño and 3/4 cup halved cherry tomatoes; cook another 1–2 minutes until tomatoes start to soften but still hold shape.

    Season veg

    Stir in 1/2 teaspoon smoked paprika, 1/2 teaspoon dried chives, and the remaining 1/2 teaspoon salt and 1/2 teaspoon black pepper. If using, add 1/4 teaspoon chipotle powder for smoky heat. Return the cooked bacon to the skillet and toss to combine. Remove pan from heat.

    Combine base

    If you used the same skillet for the vegetables, spread the bacon-vegetable mixture evenly in the skillet over low heat. Spoon the warm scrambled eggs over the top in dollops. Sprinkle the remaining shredded cheddar (about 3/4 cup) and 1/2 cup Monterey Jack evenly over the eggs and vegetable-bacon mix. Place a lid on the skillet for 1–2 minutes off the heat (or on the lowest burner) just to gently melt the cheese.

    Finish & garnish

    Remove lid. Drizzle 1/4 cup ranch dressing evenly across the skillet (or mix 1 ranch seasoning packet with 1/4 cup sour cream and thin with a splash of milk if preferred). Scatter 2 tablespoons chopped cilantro and 2 tablespoons sliced green onions over everything. Taste and adjust with a pinch more salt or pepper if desired.

    Serve the ranch-style breakfast straight from the skillet or transfer to a serving platter. Offer warm flour tortillas or toasted country bread and sliced avocado on the side for building tacos or open-faced bites.
