Dry pancake mix

Method

Prep

  1. 1

    Prepare Oreos

Place 14 Oreos in a zipper bag and pulse with a rolling pin or use a food processor to coarsely chop. Aim for a mix of small chunks and some finer crumbs (not powder). Reserve in a bowl.

  2. 2

Measure and set out all other ingredients. Preheat a griddle or large nonstick skillet over medium (about 350°F / 175°C) while you mix batter.

Make pancake batter

  1. 3

    Combine dry ingredients

In a large mixing bowl whisk together the flour, sugar, baking powder, baking soda, and salt until evenly distributed.

  2. 4

    Combine wet ingredients

In a separate bowl whisk the eggs until blended. Add buttermilk, melted butter (cooled slightly so it won't cook the eggs), and vanilla extract; whisk until smooth.

  3. 5

    Mix wet and dry

Make a well in the dry ingredients and pour in the wet mixture. Gently fold with a spatula until just combined — a few small lumps are okay. If batter seems too thick, add up to the 1/4 cup whole milk to loosen to a thick but pourable consistency.

  4. 6

    Fold in Oreos

Fold the coarsely chopped Oreos and optional mini chocolate chips into the batter, distributing evenly but avoiding overmixing (no more than 4–6 gentle folds).

Cook pancakes

  1. 7

Heat griddle/skillet: make sure the griddle is at medium heat. Test by sprinkling a few drops of water — they should dance and evaporate. Grease lightly with a little butter or oil and wipe to an even sheen.

  2. 8

Portion batter: using a 1/4-cup measuring cup, pour batter onto the griddle, leaving space between pancakes. For a slightly larger pancake use 1/3 cup.

  3. 9

Cook first side: cook until bubbles form across the surface and edges look set, about 2–3 minutes. Check underside: it should be golden-brown.

  4. 10

Flip and finish: flip gently and cook the second side about 1–2 minutes, until cooked through and golden. Transfer to a warm plate and keep loosely covered while you finish the remaining batter. Stir batter gently between batches if solids settle.

  5. 11

If pancakes are browning too fast before cooking through, lower the heat slightly. If they are taking too long, raise the heat a little.

Serve

  1. 12

Stack pancakes, dust with powdered sugar if using, and serve with maple syrup or whipped cream. For extra Oreo effect, sprinkle a few extra chopped Oreo pieces on top just before serving.
