Combine dry ingredients
In a medium mixing bowl, whisk together the flour, granulated sugar, and fine salt until uniform.

Whisk wet ingredients
In a separate bowl or large measuring cup, whisk the eggs lightly, then add the milk, water, melted butter, and vanilla extract (if using).

Make smooth batter
Gradually pour the wet mixture into the dry ingredients while whisking constantly to avoid lumps. Continue whisking until the batter is smooth and thin. If you prefer a very smooth batter, strain through a fine-mesh sieve or blend for 15–20 seconds in a blender.

Rest the batter
Cover the bowl and let the batter rest at room temperature for 20–30 minutes. Resting relaxes the gluten and helps produce tender crepes. If short on time, you can cook immediately, but results may be slightly chewier.

Cook first crepe
Give the batter a gentle stir (it may separate slightly). Pour about 1/4 cup of batter into the center of the hot skillet. Immediately lift and tilt the pan, swirling the batter to form a thin, even round. Cook until the edges lift and the underside is lightly golden, about 45–60 seconds.

Repeat
Repeat cooking with the remaining batter, stacking crepes on the warm plate. This recipe yields about 8–10 thin crepes depending on thickness and pan size.

Warm the Nutella
If the Nutella is thick and stiff, warm it briefly to make spreading easier: place the measured Nutella in a small microwave-safe bowl and microwave in 8–10 second bursts, stirring between, until soft but not hot (about 20–30 seconds total). Alternatively, place the jar in a bowl of warm water for a few minutes.

Fill crepes
To assemble, place one crepe flat on a plate. Spread about 3/4–1 tablespoon of warmed Nutella over half of the crepe using the back of a spoon, leaving a small border at the edge. Fold the crepe in half, then fold again into a triangle (or roll it up) to enclose the filling. Repeat with remaining crepes and Nutella.

If desired, lightly dust assembled crepes with powdered sugar, top with fresh berries and a dollop of whipped cream, or drizzle a little extra warmed Nutella over the top.

Serve crepes warm. Leftover crepes (without whipped cream or berries) can be stacked with parchment between and stored in an airtight container in the refrigerator for up to 2 days. Rewarm gently in a skillet or microwave before filling.
